Vegetable Paratha is full of taste. Eating vegetable paratha is very beneficial for health. It doesn't take much time to make. All the ingredients to make it are easily available. Children also get nutrition from it. Let us know how to make Vegetable Paratha Recipe.

If your child or any member of the house does not like vegetables then paratha is the best way to feed these vegetables. If Veg Paratha is fed to him, then he will never refuse to eat vegetables.

Necessary ingredients :

  •  Wheat flour 1 cup
  •  Grated carrot 1/4 cup
  •  Grated cabbage half cup
  •  1/4 cup chopped capsicum
  •  Finely chopped green onions or plain onions 2 teaspoons
  •  Chopped fenugreek 2 tbsp, optional
  •  Ginger-garlic paste 1 tsp
  •  ½ tsp turmeric powder
  •  Green peas, boiled and mashed - 1/4 cup
  •  Finely chopped coriander - 1 tbsp
  • Garam masala powder - 1/4 tsp
  • Coriander powder - 1 tsp
  • 1/2 tsp red chili powder
  • 2.5 tsp oil + for shallow frying
  • Salt to taste

Method :

Heat 1 tsp oil in a non stick pan on medium heat. Add carrot, cabbage, capsicum, green onion, fenugreek leaves and ginger-garlic paste to it. If you are using plain onion, first fry it for 1-minute and then add all the vegetables.

Add salt and turmeric powder and mix well. Fry till the vegetables become soft, it will take 3-4 minutes. Add mashed green peas.

Mix well and turn off the gas. Let the vegetables cool for 5 minutes.

-In a bowl add 1 cup wheat flour, 1 tsp oil and salt. Then add the mixture of cooked vegetables, chopped coriander leaves, chopped green chilies, red chili powder, garam masala powder and coriander powder. Mix them well.

Add water little by little as needed and knead a soft but slightly firm dough (like paratha dough). Pour 1/2 tsp oil on the dough and grease its surface with oil. Leave the dough for 10 minutes.

- After 10 minutes, break 8-10 dough balls.

Take 1/2 cup dry wheat flour in a small plate for the paratha. Take one ball and flatten it by pressing it between the palms. Dust it with dry flour and roll out a round or triangular paratha by placing it on a rolling board.

- Keep the griddle on medium heat for heating. When the griddle is hot, place raw paratha on it. When small bubbles start appearing on the surface of the paratha, turn it over and reduce the flame.

- Spread 1/2 tsp oil evenly on its surface and let it roast for about 30-40 seconds. Flip it again. Make the flame medium and spread 1/2 tsp oil on its surface. Press it again and roast it for 30-40 seconds. stop cooking once it has golden brown spots appear on both the sides.

Make all the parathas in the same manner. Serve the mixed vegetable paratha with curd and pickle.

  • Mash the boiled peas properly so that the paratha does not break while rolling.
  • You can add any vegetable as per your choice.
  • You can also boil potatoes, carrots, cabbage and green peas instead of roasting them.
  • For variation, you can make triangle shaped parathas instead of round ones.
